Lamb kebab

Lamb kebabs are a delicious and flavorful dish often made with seasoned ground lamb or lamb chunks and grilled to perfection. Here's a basic recipe for Grilled Lamb Kebabs using lamb chunks:

Ingredients:

  • 1 lb (450g) lamb leg or shoulder, cut into 1-inch cubes
  • 1 large onion, grated or finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp ground allspice
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions:

  1. Marinate the Lamb:

    • In a large bowl, mix the grated onion, garlic, olive oil, cumin, coriander, paprika, cinnamon, allspice, lemon juice, salt, and pepper.
    • Add the lamb cubes and toss to coat them thoroughly in the marinade.
    • Cover and let the lamb marinate in the refrigerator for at least 2 hours (or overnight for a deeper flavor).
  2. Prepare the Skewers:

    • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
    • Thread the marinated lamb cubes onto the skewers, leaving a bit of space between each piece for even cooking.
  3. Grill the Kebabs:

    • Preheat your grill or grill pan to medium-high heat.
    • Grill the kebabs for about 8-10 minutes, turning occasionally until the lamb is cooked to your desired level of doneness (medium-rare to medium is ideal).
  4. Serve:

    • Remove from the grill and let the kebabs rest for a few minutes.
    • Garnish with chopped parsley and serve with pita bread, rice, or a fresh salad.

Optional Additions:

  • You can add vegetables like bell peppers, cherry tomatoes, and onions to the skewers for a more colorful and complete meal.
  • Serve with yogurt sauce or tzatziki for extra flavor.

Enjoy your delicious lamb kebabs!
